Instant Special Occasion Cake:

So, it’s ‘blank’ thirty and you’ve just read your diary.

Horror of horrors, it’s your turn to have the girls over for coffee/afternoon tea/supper, and it gets worse……. it’s a birthday celebration!

OK, what to do? You have that copy of Cecelia Ahern’s latest, perfect for a re-gift, sorted.

But what about the cake?

Listen carefully, I will say this only once: CHEAT.

Go down to the local shop/garage/convenience store.

Grab the first jam sponge you see (round or swiss-roll will do), a tub of strawberries/raspberries/red currents (any flipping berry for crying out loud) and a carton of whipping cream.

Rush home, without killing anyone, and get to work.

 

What you need:

 

1 x bought light and bouncy sponge cake

1 x tub of fresh berries

1 x large carton of whipping cream

icing sugar for sprinkling

mint for decoration (or any non-poisonous greenery, but don’t let anyone eat it just in case……)

 

What you do:

 

Assemble as in the picture…….hurry, they’re coming……..base sponge……cream……berries……top sponge…….cream……berries…….icing sugar……..greenery….done
