The latest exciting development at the Clayton Hotel Cork City is the appointment of Gerry Gillen to the role of Executive Head Chef.
A native of the gourmet capital Kinsale, Gerry qualified from Dublin College of Catering and embarked on a professional career with leading 5 star and luxury hotel brands in Ireland and the UK. Having worked at The Shelbourne (Dublin), The Hyde Park Hotel and renowned Grosvenor House in London, Gerry cultivated his culinary skills in the finest hotel restaurants before returning to his native Cork in 2000. He was appointed to the role of head chef at The Blue Haven restaurant in Kinsale, before take up the position of Executive Head Chef at the popular Elm Tree Restaurant, Glounthaune in 2006 where his cuisine and menu choices ensured a number of awards for the renowned eatery.
At the Clayton Hotel Cork City, Gerry will be responsible for delivering high quality, sophisticated fare for events and functions, while overseeing the Globe Bar and Restaurant, with its contemporary European style dishes, with the finest artisan produce sourced directly from the English Market.

Located on Lapps Quay in the heart of the city, the popular and award winning Clayton Hotel Cork City is currently nearing completion of a €2 million euro investment, which has seen rooms refurbishment, Clayton Hotels’ signature Roaster Coffee Dock, improved conferencing and health and leisure facilities amongst other redevelopment. While room renovations are already underway, works on the ground floor Atrium area and Globe Restaurant will conclude in November 2017.
